This interactive workshop is led by Dave Lim, the National Champion for Tea Brewing and Tea Pairing at the Tea Masters Cup Singapore 2017, and whom represented Singapore in the Tea Masters Cup International 2017 and won 3rd prize in Tea Pairing. Tea has had a long history. It’s caused wars and made countries wealthy. Its wonderful flavors are comparable to coffee, but only a few understand the depth and complexity of specialty teas. This experience will give participants a unique and layered perspective on the world of tea, and you will earn a deep respect for unblended, unflavoured and unsweetened specialty teas which are good on their own. While participants practice traditional and alternative ways of brewing tea, Dave will illustrate how the different classes of teas are processed, how to decipher what a tea’s color indicates and how to differentiate the flavours between classes of teas. Some of the key topics explored in this workshop will be: - The processing methods for the different classes of teas - The flavours of the different teas and how to differentiate them - Basic theory of tea pairing and application

About the expert
- 3rd prize winner in Tea Pairing, Tea Masters Cup International 2017 - National Champion for Tea Brewing and Tea Pairing at the Tea Masters Cup Singapore 2017 - Silver Medallist in Australian International Coffee Awards 2017 - Owner of Sun Ray Cafe, Parchmen & Co and Parchmen Academy of Coffee and Tea Despite being certified by Australia Tea Masters in Melbourne, Dave Lim is hesitant to call himself a Tea Master because he thinks that one is never a master but always a student. In addition to his Bachelor of Engineering from Nanyang Technological University, Dave earned a Coffee Diploma from Specialty Coffee Association of Europe in Barcelona, Spain. He is an authorized certifier for the Specialty Coffee Association and recently established Parchmen Academy of Coffee and Tea. In 2010, Dave founded Sun Ray Cafe, one of Singapore’s earliest and longest-surviving pet-friendly cafes. Despite a punishing first few years and customer bias for "Instagrammability" over quality, Dave continues to be committed to natural flavors. There are no sugar syrups, no ice-blended coffees and no artificially flavored teas on his menu. All breads and cakes are baked in house. He buys direct from tea and coffee farms, and all roasting and brewing happens on the premises. He also makes ice drip coffees and teas in his cafe.
