Eating (and debating about which hawker stall sells the “best” chicken rice or chilli crab) is affectionately known as Singapore’s national past time. In this delicious 4-hour experience, participants will receive a thorough introduction to Singaporean shopping and food preparation habits, derived from the varied ethnicities of the island’s diverse population – Chinese, Malays, Indians, influences from the West, and mixed heritage such as the Peranakans. The day will start with breakfast in a hawker centre with Maureen Ow, also known as Miss Tam Chiak, one of Singapore's top food bloggers. Maureen will then guide participants around Tekka Wet Market, where locals buy their fresh produce, explaining the fascinating origins and historical relevance of some of Singapore's favorite dishes. Participants will immerse themselves in the sights and sounds of the market, as well as interact with vendors (commonly known as “uncle” or “auntie”) selling fresh seafood, poultry, vegetables, plus herbs and spices from the region. Then it’s a brief train ride to a cooking studio for a dynamic 2-hour class led by Chief Culinary Chef, Rayner Ng. This hands-on experience teaches participants how to get the most out of the ingredients in the market, and how to prepare three local favourites. At the end of the class, participants will have the chance to enjoy the food they prepared together.

About the expert
- Well-versed in both Asian and Western cuisine - Been teaching culinary workshops since 2011 - Represented Philips in HPB Healthy Lifestyle Festival SG 2015 Singaporean Chef Rayner Ng is the founder and owner of His Food Concepts Pte Ltd, where he has been conducting healthy cooking demonstrations and culinary workshops since 2011. Rayner is passionate about improving the health and well-being of individuals through simple nutritional tips and easy cooking preparation methods that blend seamlessly with everyday life. He seeks to establish that healthier food can be tasty at the same time. He has also been recognised by Health Promotion Board, Singapore (HPB) to conduct healthy cooking workshops under the Workplace Health Promotion (WHP) Programme. After graduating from the University of Western Australia, Rayner was employed as a chef at Resorts World Sentosa and the Swiss Club. He also holds a Diploma in Culinary Arts from At-Sunrice GlobalChef Academy, Singapore, and is well-versed in both Asian and Western cuisine.
